Ginger Cookies

Now I know that everyone is after healthy recipes to keep that New Year, New You goodness going. But this week I could resist making a batch of ginger and oatmeal cookies.  I don’t feel to bad about this because they are part of my whole spread the love through little things campaign that  I am currently working on. And I only ate one. The rest were devoured by others. See I am practically a saint. So if you are trying to be healthy, why not make these as a treat for someone else, or just treat yourself because it is so darn cold and quite frankly they go down mighty well with a cup of tea.

So there we go, all the reasons why you should make these now.

Well what are you waiting for …

oh yes the recipe  – Here we go.

Ingredients  

4oz butter

1 tbsp golden syrup

1oz dark brown sugar

2 oz caster sugar

2tsp ground ginger

2oz plain flour

1/2tsp baking powder

1/2t tsp ground cinnamon

6oz rolled oats

1 egg

2oz dark chocolate for the top

Method

  1. Preheat your oven to 180C degrees
  2. Melt the butter and golden syrup in a bowl over a pan of boiling water
  3. Combine the sugars, flour, baking powder, ginger, cinnamon and oats in a bowl
  4. Once the butter is melted pour your dry ingredients into butter and syrup mix and combine
  5. Beat the egg in a separate bowl and then stir in, mix until everything is combined
  6. Line a baking tray with greaseproof paper and spoon a generous teaspoon of mixture ( space them reasonably generously as they will spread)
  7. Bake for 10 mins, remove from the oven and leave to cool
  8. In a double boiler melt your dark chocolate. Once the cookies have cooled use a spoon to drizzle the chocolate over. Alternatively you can dunk the biscuits half in the chocolate so they are half and half
