I’m Madeleines, I’m Madeleines

In preparation for this Saturdays Crafternoon Tea Party, I was testing out some recipes over the weekend and uncovered the delights of Lemon Madeleines.

Sweet but not too sweet, light and airy but still filling and deliciously lemony, oh and pretty simple to make.

As a result I won’t ramble on about them for hours other than to say, they are the perfect accompaniment to a cup of earl grey and a sofa.


3 free-range eggs

4½oz sugar

7oz plain flour

1tsp baking powder

Zest of  1 Lemon

1 tsbp honey

4 tbsp milk

7oz butter


  1. Melt your butter in pan on a low heat and leave to cool
  2. Beat the eggs and sugar in a bowl until they have turned pale and fluffy ( about 5-10mins)
  3. Put the flour and baking powder into a separate bowl and add the lemon zest
  4. Add the honey and milk to your cooled butter, then add the egg mixture
  5. Add the flour mix bit by bit and stir until there are no lumps. Cover and leave to rest in the fridge for a few hours or overnight.
  6. Preheat your oven to 190 degrees
  7. Butter your madeleine pan or muffin tin and spoon in the batter until the moulds are not quite filled
  8. Bake the madeleines for five mins then turn of the oven for one minute leaving the madeleines in the oven. Then turn the oven back on at 160 Degrees and bake for another five minutes.
  9. Remove from the oven and leave to cool for as long as you can before devouring

    Good luck with crafternoon tea. I can’t think of anything nicer than a Saturday afternoon creating, inspiring, sharing with like-minded people, whilst relaxing with tea and your lovely Madeleine cakes. Will you put on website what everyone has made? And some pictures of the event?
